Small concentrated berries are de-stemmed upon arrival at the winery. Fermentation on the grape skins at 23 degrees c, Pump over twice daily to aerate the fermenting wine. Post Malo-lactic fermentation the wine is held on fine lees prior to bottling. History: Chenin Blanc has history dating back to the ninth century, famed for its premium wines in Loire Valley, France, South Africa now sits as the biggest producer of this variety.
